Squeaky Cheese


And here we have by popular demand (Celiac) Chuck making squeaky cheese in his cheese apron (formaggio) from Italy. He is in the process of making a batch of squeaky cheese curds and a cheddar cheese wheel from 4 gallons of fresh cow's milk that we got from a neighbor up the road. They have a jersey cow that is giving them about 9 gallons of milk a day. And we're talking milk with a LOT of cream on top.
It makes great cheese. And I made some pretty yummy homemade ice cream from it as well. Now lest you get freaked out about "unpasteurized" milk. Let me hasten to assure you that Chuck spent several hours last night pasteurizing the milk before he began the cheese making today.
Anyway, Chuck is getting pretty good with the cheese thing. Well, I think so anyway. This batch seems like it is about the squeakiest yet. Um um good!

That is awesome...Chuck knowing how to make his own cheese!!! I love cheese curd, so the squeakier the cheese the better...the apron helps the process, I'm sure :)
