Ok so...


I can't seem to manage to get the right combination of files, time and working computers together for some reason. I am home and I refuse to sit for 45 minutes waiting for a photo to "maybe"load (and that is a BIG maybe). But, at school I don't have time to write or I forget the files. It's that memory thing AGAIN!
Anyway, I haven't even decided what kind of pic I want to post, so I suppose my whole dilema is just me ranting. I guess there is one thing I would like to request anyone who actually reads this drivel, if you have a good fish recipe - salmon, halibut, rock fish, snapper - "whatever" as grandma Lydia B. would say would you be so kind as to share it with me? I can tell that I will need something other than plain ole grilled or baked fish. Chuck bought a couple of recipe books while he was in Alaska, but I would prefer to try recipes that someone I know has tried. If you have the time and any recipes it would be just grand!
Today was the first full day of school with students. My class sizes are decent. My two intro to art classes are at 30 and 31 which is about 6 more than reasonable for teaching and actual physical seating space. But, that is pretty typical and usually by the middle of the semester it narrows down to 27 or so. The class makeup looks pretty good so far. There are no obvious psycho types and they have all been pretty receptive to the things we have done so far... which besides the usual classroom rules,has been some interaction with other students and a little reflection about virtues. We started using some techniques at school from the Virtues Project, which is a program set up by a couple who are working to raise the level of consciousness about core values and virtues in society through positive reinforcement, listening and positive communication skills. It's kind of a tough sell for some kids who aren't comfortable with talking, let alone talking about how they "feel" about things. But, it is one of the first things that has come along in all the years of my teaching that I can actually see making a difference for some students. So, in spite of the sort of "new age" feeling I get at times when I'm presenting some of the activities, I'm willing to try it. I tell the students that part of the reason that I am willing to take time with it is that I see it as a means for improving life skills and interpersonal relations in a society that is becoming more and more detached and more and more cynical and jaundiced. I have only had one student who refused to participate so far. So, I guess we'll see how it goes as the year progresses. Overall I feel pretty optimistic about the prospects in my classes and hope that we don't have any major traumas like last year that put things into a tail spin. Knock on wood!
As far as the home project goes - I am waiting to get some pics printed out for the frames on "the wall" and of course there is still the moulding and crown moulding to be done. I am enjoying my lovely new carpet, the extended cabinets, bay windows and refurbished chairs immensely. I still can't get over how different it all seems from when we first began. But, it's different good, not different "Oh my gosh what have we done!" So, that's good.

Here is our favorite salmon recipe, let me know if you try it:

INGREDIENTS:
2 lb salmon filet
2 cloves of garlic, minced
½ teaspoon sugar
1 tablespoon soy sauce
1 tablespoon fish sauce
¼ teaspoon salt
Dash of black pepper

DIRECTIONS:
1. In a small bowl, mix together fish sauce, with sugar, salt, and garlic.
2. Clean salmon and pat dry with paper towel.
3. Place salmon in fish sauce mixture and let sit for 10-15 minutes.
4. Cover broiler ban with aluminum foil, and place marinated fish on top.
5. Pour the excess fish sauce mixture on top of the salmon, and sprinkle with black pepper.
6. Broil in the oven for 15-20 minutes, or until golden brown.
7. Serve with steamed white rice.

I just made the best salmon dinner this week. I don't have the recipe with me so if I go home and realize I forgot something I will call you.

Ingred:
1 to 1 1/2 lb salmon
2 tlb. soy sauce
1 medium orange
1 tlb. minced garlic
2 cups brocolli florets
1 cup chicken stock
3/4 cup water
1 cup couscous
1 tsp. lemon pepper or fresh ground black pepper
nonstick pan spray

Directions:
1. Preheat oven to 450 degrees F. Sprinkle salmon with pepper (either or lemon or fresh ground). Coat baking dish with non stick spray. Place salmon in dish and sprinkle soy sauce on it. Squeeze some of the orange juice on the salmon and place orange slices on top of salmon. Place in oven for 8-12 minutes.
2. In the meantime, in a saucepan boil the chicken stock, water, and minced garlic. Add brocolli and return to a boil. Cover and steam brocolli for 3-4 minutes. Add couscous, recover, remove from heat and leave standing for 5 minutes.
3. Serve salmon over couscous and enjoy!
It was so yummy we both gave it a 9 out of 10.

I don't have a salmon recipe. Sorry. But I can make snide remarks about stinky fish smell...

Aleta has the BEST Halibut recipe EVER. Next time I talk to her I will try to remember and ask.
